A PORTISHEAD restaurant has this month (February, 2018) launched a new menu designed to help combat food wastage.
Venga tapas bar and restaurant on the High Street is reducing the ingredients thrown away from its kitchen on a daily basis by introducing a strictly no waste policy.
Manager, Scott Pearce explained: “One of the hottest topics around at the moment is food waste and it’s fast becoming an important issue for our customers wishing to be more environmentally savvy, and to do something to help.
“So, here at Venga this year we’re doing our bit too and our new menu focuses on fresh produce, as always, but also shows a respect for the ingredients through our ‘no waste from the kitchen’ initiative, which means we use every part of each product and reduce the waste from our premises significantly.
“The menu has an emphasis on fresh and healthy exciting dishes such as cauliflower couscous with almonds, pine nuts and pomegranate and squid ink paella.
At the same time, we’re also launching a new cocktail menu.”
According to WRAP, the waste and recycling advisory body, each year in the UK about 10 million tonnes of food is thrown away.
The United Nations says the amount of food lost or wasted every year worldwide is equivalent to more than half of the earth’s annual cereals crop.
Roughly a third of all food produced, according to the UN, is wasted. However, hundreds of millions of people still suffer from severe hunger and malnutrition.
Scott added: “These stark realities form the bigger picture, but, for restaurants like ours, there are lots of small but highly effective ways to embrace waste management and sustainability.
“The main thrust of our policy is to know our customers. Our menu is designed to attract an audience with an educated palate who value provenance. Preparation excess is, where appropriate, composted or recycled into bases for sauces and stocks and for staff meals.”
The Venga restaurant and tapas bar opened in 2013 under the ownership of husband and wife team, Chris and Mike Yeatman, drawing on many Mediterranean influences for the menu including dishes from Barcelona, Madrid and Granada.
